The Real Hungarian Apple Strudel – Az Igazi Magyar Almás Rétes

The Apple Strudel became popular in the 18th century through the Habsburg Empire.

The strudel is often associated with the Austrian cuisine, and also known as a traditional pastry around the whole area of the former Austro-Hungarian empire. Therefore, for many it may sound as a reminder of the Austrian Strudel, which is made of plate feuilletée, but the Hungarian made strudel is more kinda filo dough. The filo dough is similar to middle Eastern or Turkish filo. The traditional Strudel pastry dough is very elastic. It is made from flour with a high gluten content so pardon … to the folks for thier sensivity to gluten)… egg, water and lard. No sugar is added. The dough need to be worked hard and vigorously rested, and then rolled out and stretched by hand very thinly with the help of a clean linen kitchen towel.

By-the-way, the best known strudels are apple strudel, sweet soft quark cheese strudel, followed by sour cherry or sweet cherry strudel or so much loved by Hungarians the poppy seed strudel. The sweet strudels are often served along with cream. Many folks like the savoury strudels and there are some of them: sauerkraut, pumkin, cabbage … soforth … fancy fantasy up to imagination.

Receipt: for 3 rolls (wish more than 3 rolls  lets say 6 rolls then duplicate the amount of ingredients)

Preparing Time: 45-60 mins.

Ingredients: 1 big pack of filo dough cca. 400gr, 1 kg apples, 1/2 tbs ground cinnamon, 150 gr sugar (depending how sweet to taste), 2 tbs breadcrumbs.

Preparation: Peel and core apples then grate them into a big bowl. Sprinkle with cinnamon and sugar, mix well. Lightly dampen a clean dish towel and spread out over a smooth work surface. Press to extract any excess juice. Spread the dough layers on the top of each other over the dish towel and brush with oil.Scetter breadcrumbs lightly onto the last pastry. Sprinkle with walnut. Place the apple filling on the side. Roll up the pastry tightly with the help of the kitchen towel. Brush its top and sides with more oil, so to be crunchy. Bake it in pre-heated oven to 180 C degree for about 15-20 mins.

Don’t Worry … Be Happy … cause it might not have the look as expected of your baking for the first time but it probably taste excellent and keep in mind that you can be an expert  by gaining a little practise.

Floating Island – Madár Tej – Hungarian Deliciousness Creamy Dessert

This is another famous and classic easy recipe among Hungarian families.  

The Hungarian “Bird’s milk” – “Madártej” is a vanilla custard containing foam dumplings whipped from egg whites, and originates from France. In 1834 this sweet dessert made from milk and eggs made its way to Hungary as deeply loved delight for sweet tooth individuals.

Bird milk is an imaginary name, more than probably a wandering term that originally referred to an imaginary food (its history dates back to antiquity).

The word bird milk has appeared with different names in many European languages since the middle of the 18th century. The Hungarian name as Bird’s milk – Madártej is known in the world having named differently …

The dessert made its success all through the Continent. It can be found in almost all the countries in Europe and even in India … e.g. “Oeufs á la neige” – (eggs on the snow) or “Ile flottante” – are often available in French bistros. The floating islands are known by the English speakers and also for Spaniards. In addition to us, the Romanians also follow the bird’s milk line. The Austrians go on calling it canary milk “Kanarimilch”. In India, “Rasmala” is made without eggs and cardamom, which is also flavored with pistachios and saffron.

Receipt – Ingredients – for 4 person – peparating time: 20 mins.


For the basic cream … 6 eggs separated, pinch of salt, 150 g sugar, 1 liter milk, 12 g vanilia sugar (1 packet), 3 tbs flour, 10 dkg raisins Instead of the 1 packet of vanilla sugar or a little aroma, if possable choose 1 real vanilla stick, it’s worth it, it gives the bird’s milk a yummy taste.

Step-by-step Cooking … Meringues beat egg whites with a pinch of salt until soft peaks form. Add 3 tbs of sugar and beat until stiff. Bring half of the milk and scraped seeds of vanilla stick to boil in a large pot, then reduce to a simmer. Scoop up egg-sized peices of beaten egg white mixture and gently slide into the simmering milk. When the meringues rise, carefully turn them and cook on the other side. (about 1 min. egy side) Set then after aside.

For the vanilla sauce … add the rest of the milk into the pot and let it start to simmer again. Mix the yorks with the remaining sugar and flour. Add the vanillia suger to the simmering milk. Remove from the heat, pour slowly – ladia-by-ladie – into the york mixture, whisting constannly. Then pour the mixture in the warm milk. Add thróe raisin Place the pot back on to the heat and cook over low heat until the sauce sóbegins to ticken.

To assemble and serve, spoon meringues into a glass bowl. Pour the vanilla souce on top sprinkle with raisins. Best is when cold, so store in the fridge for a while before serving, but maybe in between someone has discovered it and many are missing. Then off you go it only take 20 mins to get this yummy dessert ready again.

After a spellbinding performance of „The Swan Lake” of last year in Budapest. This year the Moscow Ballet is to showcase again the most beautiful gems of classical dance The Swan Lake Ballet. The performance will be on stage twice in 2019 for a culture-hungry audience.  The motto of the company is simple: to present the beautiful noble traditions of the classical dance theater to the widest audience and young people. it has been a pledge of uninterrupted success for thousands of audiences on five continents of the world – for over two decades now.

Set to Tchaikovsky’s magical and mystical score , The Swan Lake is one of the most famous and best loved works in the Ballet repertoire worldwide . The Royal Moscow Ballets production of Swan Lake is an irresistible combination of drama and tragedy set against the dramatic battle between good and evil.

Premiered by the Bolshoi was in 1877, “The Swan Lake” tells the story of Princess Odette, turned into a swan by a wicked wizard. Her near rescue by Prince Siegfried – played by Nijinsky in the classic 1911 version in London before his house arrest in Budapest – provides the ballet with its tragic ending.

The ballet troupe permanent participants of the Russian, French, Swiss, Polish, Spanish, Italian, Austrian, Irish and German theater people, but occur in Israel, in the Canary Islands, China, Korea, Japan, Malta and Sri Lanka.

The RMB has since given one thousand shows around the world, from Austria to Zambia, also toured with evergreen favorites such as ‘The Nutcracker’, ‘Romeo & Juliet’ and ‘Cinderella’.

The troupe was founded by Anatoly Emelianov, August 12, 2002 took place first show – and pillars of the Moscow intellectuals also attended the show. By the tenth anniversary of the dance group, had already staged 20 modern and 15 classical ballet performances, choreographed by Anatoly Emelianov. Since the group’s existence, they have toured in many countries such as Tanzania, Zambia and Kenya – the dancers have been staged in the immediate vicinity of Victoria Falls and the audience has received a huge ovation from Don Quixote.

Due to the rapid decline in tickets and the great interest,  “The Swan Lake” ballet troupe will hold an extra performance! On 3. December, before the evening performances, at 3 p.m. will include Tchaikovsky’s masterpiece at the Erkel Theater.

The most popular of all Classical Ballets – „Swan Lake” will be drifting to Budapest on  Monday, December, 3. 2018 by the well-known superb Royal Moscow Ballet dancers, demonstrating their continuing quality of dance and performances in dramatic production of this timeless favorite set of Tchaikovsky’s superb score. Tchaikovsky’s world-famous piece was directed by Marius Petipa, Lev Ivanov and Anatoly Emelianov. Originally presented, with choreography by Julius Reisinger – Bolshoi Theater, Moscow – March, 4. 1877 but superseded by a new choreographic version by Marius Petipa and Lev Ivanov  – Maryinsky Theater, St. Petersburg – February, 8. 1895 and subsequently established as one of the masterpieces of ballet.

The famous Act II of Swan Lake, choreographed by Lev Ivanov as part of a memorial tribute to Tchaikovsky who had went ahead the year before.

This legendary piece is a dream to come true to the ballet dancers to perform on stage and almost every ballet company in the world it in their in repertoire.

The famous Moscow Ballet of Classical Choreography was founded in 1990, with ballet dancers from the leading theaters of the CIS Countries and the Bolshoi, Kirov and Ballet Theater of Kiev and Odessa.

The company developed by Anatoly Emelianov and their first performance was held on August 12, 2002 – the show was attended by illustrious guests.  On their 10th anniversary of the dance group was already over 20 modern and 15 classical ballet performances on stage, which Anatoly Emelianov choreographed.

Since its establishment, the company has toured around the world to countries, such as: France, Switzerland, Poland, Spain, Italy, Austria, Ireland, Germany, but also performed in Israel, in the Canary Islands, China, Korea, Japan, Malta and Sri Lanka where the audience greeted the performances with huge ovation.

Interview with Hungarian born Szente Szergius  … Sergio Santos at the Remix Retro Disco – Budapest

Preliminary … He is currently the only Hungarian solo artist to promote Spanish and Italian (Latin) songs, leaving them in original mood and message. He was born by the “Hungarian Sea” – Siófok and soon on November, 6. 2018., will be in Las Vegas – USA with a great concert.

Raising some question to speak about from where he started, influences, bonding at his different stages in his life? Just like an open book started speaking about his childhood age up to his present life… A.: „I studied music, learn to play on violin during my childhood, was barely 13 years old and as the youngest competitor won at the National Folk Song Competition. In those days was a founding member of the Siófok City Child Choir, already sang in different foreign languages.”

Jumping from his youth childhood to the age of 18. A.: „After being an active karate athlete, joined the unique specialty of Hungary at the 34th László Bercsényi Depression Reconnaissance Battalion at Szolnok. Received qualifications in parachuting, climbing and as a sniper, and even though I ended my professional career. Still didn’t know where my road gonna lead but didn’t take too long to realize what was missing from my life. My interest increasingly directed towards the professional musician world and went several times to experience the adventures of Spain. Was fully captivated by music and the Mediterranean culture.Then 2000, I reached up my steps, led me to professional musician. There the music and the Mediterranean culture influenced me forever. During my music journey composed my first songs: “Spanish Guitar” by “Isabel” and “Bachatita”.  As going back-and-forth to Spain and Hungary got acquainted with “modern flamenco” and “latin pop” styles. Arriving back to Hungary participated and won in the national talent contest’s grand prize and a  recording contract. This brought fame too and the Hungarians became to known me as a Hungarian singer, singing “modern flamenco” and Latin pop styles and in italian language, that was/is not common here in Hungary at all.” Continued by saying following: Q.: „At capital’s top clubs I was regularly invited and once met the Cuban musician – Hugo Sánchez who invited me to come to Cuba to the Santiago Cuban Caribbean Festival – 2004. It was a great privilege for a Hungarian born to be together with singers from Mexico, Puerto Rico, Venezuela, Jamaica and other Latin countries. I was the only singer from a European country.

The great success brought another public invitation call from Cuba- 2006. Again was the only one from a European country.  My first clip was about my life titled: “lo dejaría todo” My Hungarian and Spanish mix songs were played by the Cuban Radio,and reached the shores of the Mami – USA.

Received an invitation on luxury cruise ship Costa Concordia in 2009. The contract was for two-month to entertain the folks abroad. (My Guarding Angel was beside me … this ship as known sank near the Italian shore) but TG survived.

In 2010, my own production, new album, „Italian Songs”, was uploaded on the Internet. Still in this year of October completed my second film clip with my former companions parachute, when I received alias „Macho” name. In 2013… co-Mania … with Majorca band members held a half-a-year Latin show at Iberostar. After my Spanish mission visited Austria and Miami.

At the event was announced the release of Sergio Santos’s latest album and a modern EDM record reminding of  Hungary’s 1956th Revolution by Avanti Ragazzi Di Buda.   It is also the starting point for the Italian Lazio football team.

Santos is already known abroad as an awesome artist, now his main intention is to share the Latin music feeling with the domestic audience.

To-day before the official opening the journalists and business partners were able to look around at the newly opened Alza showroom in Budapest. Alza Czech web store continue to expand. The huge two floored space store cover almost 5000 square meters which is the biggest e-shop in Central-Eastern Europe. The items, objects, equipments, supplements can be easily viewed on the shelves tastefully placed. In 2017 Alza eshop was ranked  8th in Hungary.

First International Beer Festival – Gyula – Part1

Need not go to the doctor to get a prescription to heal, relax, watch the world go by before attending to the First International Beer Festival in the City of Gyula. Not-so-secret goal was by many beer and concert lover visitors to attend, taste the smooth craft  and artisan beer enjoying their time. A 4 days event with good live music concerts, food, playground for children and most of all not just the official juries to jury the craft beers and breweries  but the visitors were welcome to taste the smooth craft beers and to have a ball.

Gyula used to be the capital of the county, until the First World War. For mainly visiting Gyula in the first place is its healing hot spa and whilst in the city visiting other main attractions such as the Almássy Palace, the former home of count Almássy and the adjacent Medieval Castle. Since the 19th century in its current form, but the original structure dates back to the 17th century. The city was the main home of the Almássy Family until the World War II.. The size of the city is 255.8 km2 (98.8 sq miles) and the population is cca. 40 thousand. Taking into account of the size of Gyula, visitors beside visiting the so-called “liquid bread”  i.e. beer, were most probably witnessing many touristic venues not even expected.

The fan off Thursday welcoming the audience was by Dr. Ernő Görgényi  – major of Gyula and prominent members of the beer business. Within opening the festival spoke about the aim of the competition jointly with the festival to bring beer culture, a chance to introduce itself at  Gyula. The goal was to get acquainted with several small breweries products and their members. At the opening ceremony was urged the prizes to be handed over to the beer winners award on Saturday. Also added that there are two breweries operating in Gyula and in Békés County aBékésszentandrás distillery as well, This beer festival from now on will also call the tourists visiting Gyula whilst  healing at the hot spa to have an unforgettable memory happening at Gyula in  Békés county. This tipical event was organized for 17 years at Békéscsaba. This year, the event will not take place there. The local government of Gyula was immediately next to having the beer festival. Therefore, to the new venue an agreement was made between the major of Gyula  and Varga-Bora to organize the beer festival surrounding the Castle of Gyula. Most probably not on my own by saying there is no other Beer Festival in Hungary and maybe in Europe that is arranged in the heartbeat of a Medieval Castle, not to mention  having its peaceful hot spa just steps away from the event and many other attraction.

The 4 days of the craft beer masterpieces and street food dishes were the focus of attention, as well as publication of the Central European Beer Awards 2018 competition. The beer competitors came from Hungary, Belgium, Austria, Slovenia, Serbia, the Czech Republic and Slovakia to participate in the international beer festival, namely small brewery breweries and homemade breweries in the competition. It was in 16 categories with 167 samples examined by international jury, with Czech, Slovakian and Hungarian members.  Exactly 15 people tasted the liquid bread jointly 3-member commissions. The competition director was László Kovács from Slovakia who said,  lot of very good quality beer had arrived. He explained that drinks were thoroughly criticized for fragrance, taste, overall impression and other aspects using a state-of-the-art computer program, according to an American system.

Though Hungary was/is rather a vine-producing than a beer brewer country, but for some time the growing of craft breweries open the door for  beer lovers and soon at  the 1st. International  Beer Festival with local breweries as well they personally will tap the visitors their craft beers. The craft beers are becoming more-and-more popular and  especially reaching the warmth  of the season the heights will grow and coming up somewhere and often at beer festival will be ready to ease the thirst.

On the 25th and 26th of May the atmosphere of high-edge beer festival comes to Budapest for the tasting at the BPBW Beer Week in Budapest 2018. What makes this event special is not only the rare and hard to get these beers to shop, but also a unique occasion where the brewers from all around the globe coming over on the spot to Budapest.

(International Guitar Festival is the oldest existing and one of the major guitar events in Hungary bringing together the greatest players and hosting acts from all over the World. The festival was founded by guitarist-composer David Pavlovits in 1999, he gave concerts in more than 30 countries. He is the head of guitar department at the University of Szeged which is one of the most successful and popular communities of classical guitar in Hungary.)
