India 2021 Republic Day ceremonies were different this year.

Most probably not new information about India for many, but let’s go for a flashback to a little geography overview … India is one of the oldest civilizations in the world with a kaleidoscopic variety and rich cultural heritage. It has achieved all-round socio-economic progress since their Independence. Is is the 7th largest country in the world, India stands apart from the rest of Asia, marked off as it is by mountains and the sea, which give the country a distinct geographical entity. Bounded by the Great Himalayas in the north, it stretches southwards and at the Tropic of Cancer, tapers off into the Indian Ocean between the Bay of Bengal on the east and the Arabian Sea on the west.

Republic Day has been celebrated every year in India on January, 26, since 1950 honoring the date. This year the country marked its 72nd Republic Day. In 1950 the Constitution of India came into effect. India was a colony of the British for over 200 years and thenafter, it became independent from the rule of the British Raj following the struggle of the Indian independence movement.

Overview: The Constitution was adopted by the Indian Constituent Assembly on 26 November 1949 and came into effect on 26 January 1950 with a democratic government system, completing the country’s transition towards becoming an independent republic. Was chosen the date January, 26. as the date for Republic day because it was on this day in 1929 when the Declaration of Indian Independence (Purna Swaraj) was proclaimed by the Indian National Congress as opposed to the Dominion status offered by the British Regime.

January, 26 India celebrated R-Day by hosting the national flag, the parade of Defence and paramilitary forces, several festivities like parades are observed, which honours the Indian military forces and their cultural heritage. Each year the R-Day parade celebration starting point begins at Rajpath in New Delhi holding its way through from Rashtrapati Bhavan and end at India Gate. Unlike every year when the Republic Day parade are attended by thousands of people, this year celebrations were toned down due to the COVID-19 pandemic.

It was the first to be organized amid the covid-19 pandemic which meant celebrations had to be taken with many changes, including a shorter route for the parade and much less public participation around the events.

Each year in he past were invited foreigner chief guest. However, this year’s celebration of Republic Day as a/m looked a little different due to the coronavirus. Earlier, Prime Minister Narendra Modi invited UK PM Borish Johnson for the 72nd Republic Day to be the chief guest but he called off his India trip due to the mounting covid-19 cases at home caused by a virulent variant of the SARS-CoV2 strain that triggers covid-19.

The last time the parade did not have chief guest was in 1966 when Indira Gandhi was sworn in as PM on January,24 after the demise of Lal Bahadur Shastri.

India R-Day 2021

The ceremonial parade started off in the morning hours with the Presidential Guard escorting President Ram Nath Kovind from Rashtrapati Bhavan to the saluting dias. But this year, the parade … which usually start off from Vijay Chowk and winds its way down to the Red Fort and covers a distance of 8.2 kms … to terminate at the National Stadium. This meant that it was covered just about 1/3 or and distance cca. 3.3 km.

Missing this year at the parade were the veterans’ contingent that consists of ex-servicemen and women. Were absent the motorcycle stunts by troops of the army and the Central Armed Police Force personnel.
Each member of the contingents were wearing their mask – as per the protocol laid down by the Indian government to prevent the transmission of covid-19. In keeping with the social distancing rules, the six-day Bharat Parv – showcasing cuisines of various states – usually organized on Rajpath lawns from  January, 26-31 was neither to be held.

A new additions to this year’s parade was including the Territorial Army contingent of the Madras regiment from Andaman and Nicobar islands – the first time the island chain is being presented at a Republic Day parade in New Delhi.

Among them are things that are no longer important at all and there are some that come naturally.” so had the artist admits.

The Queen of Gymnastics Agnes Keleti turned 100 years on Saturday, January, 9.

Agnes Keleti was a headline celebrated to her 100th birthday on Saturday, January, 9, in the media not just in her native Budapest Hungary but around the world. She is the oldest living Olympic champion. Was a Holocaust survivor and winner of 10 Olympic medals in gymnastics … including five golds.

Keleti went through very hard and exciting chapters of her life … achievements, adventures, tragedies and perseverances, as she said, passed away in a flash of lightning. Also added Q.: “These 100 years felt to me like 60 yrs.”. When asked her what is the receipt to a long Life she answered Q.” Never look into the mirrow”. As always she also has kept her great sence of humor.

Agnes Keleti, was born Agnes Klein in 1921, had her illustrious career interrupted by World War II and the subsequent cancellation of the 1940 and 1944 Olympics. Forced off her gymnastics goup in 1941 because of her Jewish ancestry, Keleti went into hiding in the Hungarian countryside where she survived the Holocaust by assuming a false identity and working as a maid. Her mother and sister survived the war with the help of famed Swedish diplomat Raoul Wallenberg, but her father and other relatives perished at Auschwitz, among the more than half a million Hungarian Jews killed in Nazi death camps and by Hungarian Nazi collaborators.

Resuming her career after the war, Keleti said her main goal was to travel around the world in the first place cause she always loved travel to different countries cause in those days was not an easy thing to have a passport, to leave Hungary and then came Q.” “I loved gymnastics because it was possible to travel for free.”

Also said during the interview how much adors traveling saying, the experiences gained while traveling the world were more precious than her 10 Olympic medals. Still today she would travel-and-travel but the pandemic rules the world but still hope when it will leave she will take off to explore additional landscapes.

In 1948 was set to compete at the 1948 London Olympics but a last-minute ankle injury dashed her hopes. Four years later, she made her Olympic debut at the 1952 Helsinki Games at the age of 31, winning a gold medal in the floor exercise as well as a silver and two bronzes.

Despite her achievements — with six medals she was the most successful athlete at the 1956 Melbourne Olympics and she is recognized as one of the most successful Jewish Olympic athletes of all time — the still-vivacious Keleti said she most values her health and the simple fact that she has lived. On the eve of her birthday Q.: “I live well, and it’s great that I’m still healthy, And I love life, Health is the essence. Without it, there is nothing.”

Those travels would ultimately result in a nearly 60-year absence from her native Hungary. At the age of 35, while she was becoming the oldest gold medalist in gymnastics history in Melbourne, the Soviet Union invaded Hungary following an unsuccessful anti-Soviet uprising.

Keleti remained in Australia and sought political asylum. She then immigrated to Israel the following year and worked as a trainer and coached the Israeli Olympic gymnastics team until the 1990s.

After leaving Hungary for the Olympics in 1956, she visited her native country only once before returning to Budapest in 2015.

Keleti was awarded the Israel Prize in 2017 — considered that country’s highest cultural honor — and is the recipient of numerous other prestigious awards, including being named one of Hungary’s “Athletes of the Nation” in 2004. She holds individual gold medals in the floor exercise, balance beam and uneven bars.

Starting this year, Israel’s championship for artistic gymnastics for women will bear the name of appraised Jewish Olympic gymnast Ágnes Keleti in honor of her upcoming 100th birthday celebrated on January 9. Agnes Keleti remains the most successful Jewish female athlete ever in Olympic history.

As said in the media, today, Keleti follows her doctor’s recent advice to avoid performing full leg splits, and her near-perpetual smile and infectious laughter are reminders that even in times of great hardship, there remains the immutable potential for perseverance and the joy of life.

The Real Hungarian Apple Strudel – Az Igazi Magyar Almás Rétes

The Apple Strudel became popular in the 18th century through the Habsburg Empire.

The strudel is often associated with the Austrian cuisine, and also known as a traditional pastry around the whole area of the former Austro-Hungarian empire. Therefore, for many it may sound as a reminder of the Austrian Strudel, which is made of plate feuilletée, but the Hungarian made strudel is more kinda filo dough. The filo dough is similar to middle Eastern or Turkish filo. The traditional Strudel pastry dough is very elastic. It is made from flour with a high gluten content so pardon … to the folks for thier sensivity to gluten)… egg, water and lard. No sugar is added. The dough need to be worked hard and vigorously rested, and then rolled out and stretched by hand very thinly with the help of a clean linen kitchen towel.

By-the-way, the best known strudels are apple strudel, sweet soft quark cheese strudel, followed by sour cherry or sweet cherry strudel or so much loved by Hungarians the poppy seed strudel. The sweet strudels are often served along with cream. Many folks like the savoury strudels and there are some of them: sauerkraut, pumkin, cabbage … soforth … fancy fantasy up to imagination.

Receipt: for 3 rolls (wish more than 3 rolls  lets say 6 rolls then duplicate the amount of ingredients)

Preparing Time: 45-60 mins.

Ingredients: 1 big pack of filo dough cca. 400gr, 1 kg apples, 1/2 tbs ground cinnamon, 150 gr sugar (depending how sweet to taste), 2 tbs breadcrumbs.

Preparation: Peel and core apples then grate them into a big bowl. Sprinkle with cinnamon and sugar, mix well. Lightly dampen a clean dish towel and spread out over a smooth work surface. Press to extract any excess juice. Spread the dough layers on the top of each other over the dish towel and brush with oil.Scetter breadcrumbs lightly onto the last pastry. Sprinkle with walnut. Place the apple filling on the side. Roll up the pastry tightly with the help of the kitchen towel. Brush its top and sides with more oil, so to be crunchy. Bake it in pre-heated oven to 180 C degree for about 15-20 mins.

Don’t Worry … Be Happy … cause it might not have the look as expected of your baking for the first time but it probably taste excellent and keep in mind that you can be an expert  by gaining a little practise.

Adding Tips & Hints to Festive Duck Leg – Seasoning, Baking, Confidental, Extras

Continuing an additional miracle in roasting duck leg which is crumbly that it melts in your mouths

One of my favorite dishes for the upcoming holidays is the duck steak, quite precisely the roast duck leg, which has red-crispy skin, but its flesh is so crumbly that it melts in our mouths. To achieve this perfect texture, it doesn’t take much to be aware of all the ins and outs of roasting duck meat with the a little trick. Here are a couple to keep in mind what are these!

Seasoning:
Never miss the seasoning of thighs in the first step … need big-grain salt and freshly crushed pepper, nothing else. Mix the two together and rub the duck leg around it thoroughly everywhere, thoroughly. May even do this the night before and let the thighs stand in the fridge until baking.

Baking:
The most common mistake most people make while roasting duck legs is to fry the meat at a high temperature for less time than necessary. In this case, it will not be crumbly inside, but hard, chewy.

We can act in three ways … Bake high to lower! Place the meat in the baking dish so that the thighs do not touch each other, and then add the garlic and onion cut into larger pieces. Some folks even add bay leaves and others thyme or rosemary to the meat.

If it is made for 3-4 people, then having 4 duck legs, pour at least 3 deci of water under them. First bake at a very high temperature (220-240) for 15 mins, then lower the temperature to 150 degrees and bake for at least 1.5-2 hours. The thighs are good if the flesh is crumbly and soft on the inside, but it is already crispy on the outside and the fat has escaped from it.

Confidential:
It’s an old procedure with a very urising and trendy sound that can scare many away, as long as it’s what makes duck meat (not just) really crumbly, buttery and juicy. The essence of confit is to roast the duck in plenty of fat for a long … very long time at a low temperature. The fat used in the confit essentially protects the duck from drying out, but if wish to save time, the end result will be tough again.

Before placing it in the baking sheet, fry the thighs, starting with the skin, in a frying pan, at a high temperature. They can then go to the baking sheet and pour the previously melted fat over it. Choose a baking sheet that is large enough so that the meats don’t touch each other and the fat completely covers them! Roast the duck legs at 100-120 C degrees for at least 4 hours. If lower the temperature, need to increase the baking time. When done, remove it out of the fat. Can also toast the skin on a baking sheet, but can even toast the top in another dish in the oven.

If the duck is older, the frying time may increase further. So be sure to test it before taking it out of the oven. Insert a meat needle or fork into the thickest part of the thigh. If it easily penetrates it, it’s done.

Extras: An additional miracle of roasting duck leg is duck fat, which have already written about being one of the healthiest animal fats and the other being a crumb fired from sliced skinned duck skin.
